Classic pasta night doesn't get much better than a garlicky, slow-simmered tomato sauce clinging to perfectly al dente noodles. The sauce starts with thinly sliced garlic coaxed in olive oil until pale golden and fragrant, then whole peeled San Marzano tomatoes crushed by hand go in and bubble away until thick, glossy, and deeply flavorful. A pinch of red pepper flakes adds just enough warmth, and torn fresh basil stirred in at the end keeps everything bright and aromatic. Parabens are synthetic preservatives that sneak into a surprising number of packaged and processed foods, so cooking from scratch with whole, recognizable ingredients is one of the most reliable ways to stay clear of them. Every component here — olive oil, garlic, canned tomatoes, fresh herbs — is exactly what it says it is, with no hidden additives or preservative blends to second-guess. Finishing the dish with a drizzle of good extra-virgin olive oil and optional freshly grated Parmesan keeps that clean, straightforward ingredient list intact all the way to the bowl. It's the kind of simple, honest cooking that tastes like it took far more effort than it actually did.

Bring a large pot of water to a boil over high heat. Add the kosher salt, then the spaghetti, and cook, stirring occasionally, until al dente — tender with a slight resistance at the center, about 1–2 minutes less than the package directions. Reserve 1/2 cup of the pasta cooking water before draining. Drain the spaghetti through a colander and set aside.
While the pasta water heats, pour the canned tomatoes into a large bowl and crush them by hand, breaking them into rough, uneven pieces. Set aside.
