Sous vide steak is one of those techniques that turns a home cook into a genuine steakhouse rival, and the results here are nothing short of stunning. The ribeyes spend a long, gentle bath in precisely temperature-controlled water, which means every single bite from edge to center hits that perfect medium-rare without any guesswork. A screaming-hot cast iron sear at the end builds the kind of deep mahogany crust that crackles when you cut into it — the contrast with the buttery, tender interior is absolutely addictive. What makes this recipe a clean win is how straightforward the ingredient list is: fresh thyme, crushed garlic, kosher salt, black pepper, butter, and a neutral oil are all you need. There are no packaged marinades, seasoning blends, or shelf-stable sauces hiding synthetic preservatives in the mix, so you know exactly what's going into your meal. The basting step with foaming butter in the final moments adds richness and a gorgeous sheen that makes the whole thing look like it came out of a high-end kitchen. A pinch of flaky sea salt at the end is the only finishing touch this steak really needs.

Attach the sous vide immersion circulator to a large pot or container and preheat the water to 130°F (54°C) for medium-rare.
Pat the steaks completely dry with paper towels, then season all over with the kosher salt and black pepper. Place each steak in a separate vacuum-seal bag or heavy-duty zip-lock bag with 2 thyme sprigs and 1 crushed garlic clove. Seal using a vacuum sealer, or use the water-displacement method for zip-lock bags: lower the bag slowly into the water bath, letting the water pressure push out the air, then seal the top just before it submerges.
