Sous vide cooking transforms humble carrots into something genuinely special — silky all the way through, with a deep sweetness that roasting alone rarely achieves. The water bath locks in every drop of flavor from the butter, honey, and fresh thyme, so by the time the carrots hit the hot skillet, they're already extraordinary. That quick sear in golden butter caramelizes the edges beautifully, and the reserved cooking liquid gets reduced into a glossy glaze that coats every piece. The whole dish is built from clean, simple ingredients — carrots, butter, honey, thyme, a little salt and pepper — so there's nothing hidden to worry about, no processed additions, no mystery proteins. Fresh parsley scattered over the top at the end adds a bright, herby finish that makes the platter look as good as it tastes. This is the kind of side dish that quietly steals the show at the dinner table, whether you're serving it alongside roasted chicken, grilled fish, or a hearty grain bowl.

Set your immersion circulator in a large pot or container and preheat the water to 183°F (84°C).
Place the carrots, 2 tbsp butter, honey, salt, pepper, and thyme sprigs in a vacuum-seal bag or a zip-lock bag. Arrange the carrots in a single layer as much as possible. Seal using a vacuum sealer, or use the water-displacement method for a zip-lock bag: lower the open bag slowly into the water until only the zipper is above the surface, then seal.
