Sous vide carrots are one of those side dishes that look effortlessly elegant but deliver serious depth of flavor with very little hands-on effort. The immersion circulator does the heavy lifting, cooking the carrots low and slow in a sealed bag with butter, honey, thyme, and a touch of black pepper until they're perfectly tender all the way through. That gentle, controlled heat means every carrot comes out evenly cooked — no mushy ends or underdone centers. The real magic happens in the skillet, where a quick sear in golden butter caramelizes the outside and the reserved cooking liquid reduces into a glossy, honey-kissed glaze that clings to every bite. The whole thing is naturally free of warm spices like nutmeg, so you get clean, bright sweetness from the honey and the carrots themselves without any muddying heat. A scatter of fresh parsley at the end adds a pop of color and a little herbal freshness that makes the platter look like something from a restaurant pass. Whether you're serving these alongside a weeknight roast or dressing up a holiday table, they're the kind of vegetable dish that genuinely earns compliments.

Set your immersion circulator in a large pot or container and preheat the water to 183°F (84°C).
Place the carrots, 2 tbsp butter, honey, salt, pepper, and thyme sprigs in a vacuum-seal bag or a zip-lock bag. Arrange the carrots in a single layer as much as possible. Seal using a vacuum sealer, or use the water-displacement method for a zip-lock bag: lower the open bag slowly into the water until only the zipper is above the surface, then seal.
