Carrots rarely get the spotlight they deserve, but this sous vide method transforms them into something genuinely impressive — silky all the way through, with caramelized edges and a glossy honey-butter glaze that tastes far more elegant than the effort involved. The immersion circulator does the heavy lifting, cooking the carrots low and slow with butter, honey, thyme, and a little seasoning until they're perfectly tender and infused with flavor. A quick sear in a hot skillet after the water bath gives you that gorgeous golden color and a slightly crisp exterior that contrasts beautifully with the soft interior. The reserved cooking liquid gets reduced right in the pan into a thin, sticky glaze that coats every carrot — nothing wasted, all flavor. Fresh parsley scattered on top at the end adds a pop of color and a little brightness to balance the richness. The ingredient list is clean and straightforward, so there's no need to scan labels or worry about hidden additives sneaking into your side dish. Whether you're serving these alongside a weeknight roast or bringing them to a dinner party, they look and taste like something from a restaurant kitchen.

Set your immersion circulator in a large pot or container and preheat the water to 183°F (84°C).
Place the carrots, 2 tbsp butter, honey, salt, pepper, and thyme sprigs in a vacuum-seal bag or a zip-lock bag. Arrange the carrots in a single layer as much as possible. Seal using a vacuum sealer, or use the water-displacement method for a zip-lock bag: lower the open bag slowly into the water until only the zipper is above the surface, then seal.
