Carrots are one of those vegetables that deserve way more credit, and this sous vide method transforms them into something genuinely special — buttery, honey-glazed, and caramelized at the edges in a way that feels almost restaurant-worthy. The gentle water bath cooks them to perfect tenderness all the way through, so there's no guessing and no mushy spots, just consistently silky texture every time. A quick sear in golden butter at the end gives them that gorgeous color and a slightly crisp exterior that makes the whole dish feel elevated. Honey, fresh thyme, and a finishing scatter of parsley keep the ingredient list clean and wholesome — exactly what you want when you're thinking carefully about what goes into your body. Butter provides a source of fat-soluble nutrients, and carrots are loaded with beta-carotene, making this a side dish that's as nourishing as it is delicious. It pairs beautifully with just about any protein and comes together with minimal hands-on effort, which is a genuine win when energy is at a premium.

Set your immersion circulator in a large pot or container and preheat the water to 183°F (84°C).
Place the carrots, 2 tbsp butter, honey, salt, pepper, and thyme sprigs in a vacuum-seal bag or a zip-lock bag. Arrange the carrots in a single layer as much as possible. Seal using a vacuum sealer, or use the water-displacement method for a zip-lock bag: lower the open bag slowly into the water until only the zipper is above the surface, then seal.
