Carrots might seem like a humble vegetable, but this sous vide method transforms them into something genuinely special — silky all the way through, with caramelized edges and a honey-butter glaze that clings to every bite. Cooking them low and slow in a sealed bag with butter, honey, thyme, and a little seasoning means every bit of flavor stays locked in rather than boiling away into a pot of water. The finishing sear in a hot skillet is what takes things over the top, giving you that gorgeous golden color and a slightly crisp exterior that contrasts beautifully with the tender interior. A quick reduction of the reserved cooking liquid turns into a glossy glaze in under a minute, so nothing goes to waste. Fresh parsley scattered on top adds a pop of color and a clean, herby note that balances the richness of the butter. The ingredient list is refreshingly short and completely straightforward — no specialty items, no hidden allergens to decode, just whole, recognizable foods you can feel confident about. Whether you're serving these alongside a weeknight roast or bringing them to a dinner party, they look and taste far more impressive than the effort required.

Set your immersion circulator in a large pot or container and preheat the water to 183°F (84°C).
Place the carrots, 2 tbsp butter, honey, salt, pepper, and thyme sprigs in a vacuum-seal bag or a zip-lock bag. Arrange the carrots in a single layer as much as possible. Seal using a vacuum sealer, or use the water-displacement method for a zip-lock bag: lower the open bag slowly into the water until only the zipper is above the surface, then seal.
