Carrots rarely get the spotlight they deserve, but this sous vide method transforms them into something genuinely special — deeply tender all the way through, with caramelized edges and a glossy honey-butter glaze that makes them hard to stop eating. Because every ingredient here is whole and straightforward, you never have to squint at a label wondering what's hiding in a seasoning blend or pre-made sauce. Butter, honey, fresh thyme, salt, and pepper — that's the whole flavor story, and it's a good one. The water bath does the heavy lifting first, cooking the carrots low and slow so they're perfectly yielding before they ever hit the pan. That final sear in golden butter is what takes them over the top, building caramelization and concentrating the cooking juices into a thin, shimmering glaze. A handful of fresh parsley at the end adds a bright, herby finish that balances the richness beautifully. Whether you're serving these alongside a roast or letting them shine as the main event, they're the kind of side dish that quietly steals the show.

Set your immersion circulator in a large pot or container and preheat the water to 183°F (84°C).
Place the carrots, 2 tbsp butter, honey, salt, pepper, and thyme sprigs in a vacuum-seal bag or a zip-lock bag. Arrange the carrots in a single layer as much as possible. Seal using a vacuum sealer, or use the water-displacement method for a zip-lock bag: lower the open bag slowly into the water until only the zipper is above the surface, then seal.
