There is something deeply satisfying about a loaf of bread made from nothing but flour, water, salt, and a living starter — and this country sourdough delivers exactly that kind of honest, back-to-basics reward. With no packaged mixes, flavor packets, or store-bought shortcuts involved, every element of the taste comes entirely from fermentation and technique rather than anything added in a lab. The whole wheat flour brings a subtle earthiness and depth that pairs beautifully with the tang developed during the long overnight cold proof, giving you a complex flavor that feels earned. The Dutch oven method is the real secret weapon here — trapping steam during the first bake creates that dramatic oven spring and the kind of crackly, mahogany crust you usually only find at an artisan bakery. Inside, the crumb is open and airy, the result of patient stretch-and-folds and a properly timed bulk ferment rather than any artificial shortcut. Letting the loaf cool fully on a wire rack before slicing is the hardest part, but it ensures the interior sets up perfectly instead of turning gummy. Once you slice into it, you will understand why so many home bakers consider this style of loaf the gold standard.

In a large mixing bowl, combine the sourdough starter with 300 g of the lukewarm water and stir until the starter is fully dissolved and the mixture looks milky. Add the bread flour and whole wheat flour and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
Dissolve the salt in the remaining 25 g of lukewarm water. Pour the salt water over the dough and work it in by squeezing the dough through your fingers and folding until the liquid is fully absorbed and the dough feels cohesive, about 2–3 minutes. Cover and let rest 30 minutes.
