Sole Meunière is one of those classic French dishes that feels impossibly elegant yet comes together with just a handful of real, whole ingredients. Thin fillets get a light flour dredge, then hit a hot pan of clarified butter until they're golden and just cooked through — delicate, flaky, and absolutely worth the care it takes. The real magic is the sauce: unsalted butter cooked low and slow until it turns a deep, nutty amber, then brightened with fresh lemon juice and flat-leaf parsley. Every component here is exactly what it says it is, with no sweeteners, syrups, or processed shortcuts hiding anywhere in the ingredient list. That matters more than you'd think, because many bottled sauces and pre-seasoned fish products sneak in corn-derived sweeteners that have no business being near a plate this clean. Cooking it yourself means you control every element, from the quality of the butter to the squeeze of lemon at the end. Serve it the moment the sauce hits the fish, and you've got a restaurant-worthy dinner that's as pure as cooking gets.

Pat the sole fillets thoroughly dry with paper towels, then season both sides with the salt and pepper. Spread the flour in a shallow dish. Dredge each fillet in the flour, shaking off any excess so only a thin, even coating remains.
Heat 2 tbsp of the clarified butter in a 12-inch skillet over medium-high heat until the butter shimmers and a pinch of flour dropped in sizzles immediately. Working in two batches to avoid crowding, add 2 fillets and cook undisturbed for 2–3 minutes, until the underside is golden and the edges are opaque. Flip carefully and cook for 1–2 minutes more, until the fish reaches 145°F (63°C) on an instant-read thermometer and flakes easily when pressed with a fork. Transfer to a warm plate and tent loosely with foil. Wipe the skillet clean and repeat with the remaining 2 tbsp clarified butter and 2 fillets.
