Homemade beef jerky hits differently when you know exactly what went into it — and this version delivers serious smoky, savory flavor without any of the curing agents that show up in most store-bought bags. Conventional jerky often relies on sodium nitrate or nitrite as preservatives, which means label-reading becomes a whole project at the grocery store. Here, the marinade does all the heavy lifting: coconut aminos bring that deep, umami-rich base, smoked paprika adds the campfire depth you expect from good jerky, and apple cider vinegar helps tenderize the meat while keeping everything balanced. A hit of garlic, onion, black pepper, and optional cayenne rounds it out with just enough kick. The low-and-slow oven method — with the door propped open to let moisture escape — is what gives you that perfectly dry, leathery chew without any special equipment. Slicing the partially frozen steak thin and against the grain is the little trick that makes every strip consistently tender. Once cooled and packed into an airtight container, you've got a genuinely clean, protein-packed snack you can feel good about grabbing on the go.

Place the steak in the freezer for 30–45 minutes until firm but not frozen solid — this makes slicing much easier. Using a sharp knife or mandoline, slice the beef against the grain into strips about 1/8-inch (3mm) thick. For chewier jerky, slice with the grain.
In a large zip-top bag or airtight container, whisk together the coconut aminos, apple cider vinegar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne, if using, until combined.
