Homemade jerky is one of those snacks that feels indulgent but can absolutely fit a candida-conscious lifestyle when you build it from the right ingredients. Store-bought versions are almost always off the table — they're loaded with sugar, corn syrup, and mystery preservatives that feed exactly what you're trying to starve out. This recipe keeps things clean with flank steak or top round, coconut aminos instead of soy sauce, and a marinade built around apple cider vinegar and warming spices like smoked paprika, garlic powder, and onion powder. The result is deeply savory, smoky, and satisfying — the kind of snack that actually keeps you full. An overnight marinade does all the heavy lifting on flavor, and a low, slow oven dry (with the door propped open to let moisture escape) gives you that perfect leathery chew without any dehydrator required. Each batch makes 6 servings, so it's worth making a full tray and keeping it on hand for the week. Once you've had a strip of this, grabbing a questionable gas station bag is going to feel like a very distant memory.

Coconut aminos is a common stand-in for soy sauce on a candida diet. It does carry a little sugar from coconut sap, but this recipe uses only about 1 1/2 teaspoons per serving, which is likely fine.

Place the steak in the freezer for 30–45 minutes until firm but not frozen solid — this makes slicing much easier. Using a sharp knife or mandoline, slice the beef against the grain into strips about 1/8-inch (3mm) thick. For chewier jerky, slice with the grain.
In a large zip-top bag or airtight container, whisk together the coconut aminos, apple cider vinegar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne, if using, until combined.
