1 tbsp kosher salt
2 tsp black pepper, coarsely ground
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried rosemary, crumbled
½ tsp cayenne pepper

For smoking

2 cups wood chips (apple, cherry, or hickory), soaked in water for 30 minutes and drained

Instructions

1
In a small bowl, combine the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, dried rosemary, and cayenne pepper. Stir until evenly mixed.
2
Pat the turkey breast completely dry with paper towels. Rub the olive oil all over the surface, including under the skin where accessible. Apply the dry rub evenly over the entire breast, pressing it firmly into the skin and under the skin where possible. Place the turkey breast on a wire rack set over a rimmed baking sheet, uncovered, and refrigerate for at least 8 hours or overnight.
