This crunchy, cracked-open cucumber salad is all about contrast — cool, juicy vegetables against a bright, punchy dressing built from rice vinegar, toasted sesame oil, and a good drizzle of extra virgin olive oil. Fresh ginger and garlic bring warmth, a touch of honey rounds out the acidity, and red pepper flakes add just enough heat to keep things interesting. Smashing the cucumbers instead of slicing them is the key move here, opening up all those little cracks and crevices so the dressing really clings. Finished with scallions, sesame seeds, and a scatter of cilantro, it's a light, vegetable-forward side that leans on olive oil, herbs, and simple plant-based ingredients rather than anything heavy or processed. It comes together in minutes and makes a refreshing, produce-packed addition to a Mediterranean-style table.

Trim the ends off the cucumbers. Place them on a cutting board and smash each one firmly with the flat side of a chef's knife or the bottom of a heavy bowl until the skin cracks and the flesh splits open. Tear or cut the smashed cucumbers into rough 1- to 1 1/2-inch pieces and transfer to a large mixing bowl.
Toss the cucumber pieces with the kosher salt and let them sit for 10 minutes, until they release some liquid. Drain off the accumulated liquid and pat the cucumbers dry with paper towels.
