This slow-cooked bowl builds deep flavor the old-fashioned way, letting bone-in chicken thighs simmer low and slow with carrots, celery, onion, and garlic until everything turns tender and fragrant. Dried thyme and parsley infuse the broth as it cooks, and the chicken gets shredded right into the pot for maximum flavor in every spoonful. Wide egg noodles go in at the end, soaking up all that savory goodness while keeping a nice, tender chew. A shower of fresh parsley on top finishes it off with a bright, herby lift. It's a comforting, ladle-into-a-bowl kind of soup that fits neatly into an added salt free approach, letting the slow-cooked vegetables and herbs do the flavor work instead of a heavy hand with the shaker. Easy to make ahead and just as good reheated, this is the kind of soup you'll want on repeat all winter long.
