Few dishes hit as deeply as fall-off-the-bone short ribs that have been low-and-slow braised until the meat barely clings to the bone. What makes this version especially satisfying is the braising liquid ā pomegranate juice, apple cider vinegar, coconut aminos, and additive-free bone broth create a sauce that is tangy, subtly sweet, and rich without needing any thickeners or stabilizers whatsoever. That matters more than it might seem, because a lot of store-bought sauces and broths sneak in gums and starches that can be hard to spot on a label. Here, every ingredient is straightforward and intentional. The warm spice blend of turmeric, ginger, and Ceylon cinnamon weaves through the carrots and parsnips as everything braises together, turning humble root vegetables into something genuinely special. After the ribs come out of the oven, the braising liquid gets reduced on the stovetop until it coats a spoon naturally ā no gum needed, just good technique and good ingredients. Scatter a little fresh parsley over the top and you have a centerpiece-worthy dinner that is as clean as it is deeply comforting.
