Few things hit harder on a cold evening than bone-in short ribs that have been low-and-slow braised until the meat practically falls away from the bone on its own. The braising liquid here is genuinely special — pomegranate juice and apple cider vinegar bring a bright, fruity acidity that cuts through the richness of the beef, while turmeric, ginger, and Ceylon cinnamon layer in a warmth that makes the whole kitchen smell incredible. Carrots, parsnips, and celery braise right alongside the ribs, soaking up all that savory depth until they're silky and sweet. One thing that trips people up with braised beef dishes is hidden soy — it sneaks into store-bought broths, conventional soy sauce, and plenty of pre-made sauces — but this recipe sidesteps all of that by using additive-free bone broth and coconut aminos instead. The result is a deeply savory, umami-rich sauce with zero compromise on flavor. After a long braise and a quick reduction on the stovetop, the sauce coats every bite with a glossy, restaurant-worthy finish. Scatter a little fresh parsley over the top and bring the whole Dutch oven straight to the table — this one is a showstopper.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
