Few dishes deliver the kind of deep, soul-warming satisfaction that slow-braised short ribs do, and this version takes things to a genuinely special place with pomegranate juice, warm spices, and a heap of tender root vegetables. The ribs get a serious sear in coconut oil before everything goes low and slow in the oven, building layers of flavor that taste like you spent all day in the kitchen — because, honestly, you kind of did, and it's absolutely worth it. Pomegranate juice and apple cider vinegar bring a bright, fruity acidity that cuts through the richness of the beef, while turmeric, ginger, and Ceylon cinnamon give the braising liquid a warmth that feels almost exotic without being fussy. Coconut aminos stand in for soy-based sauces, and the bone broth keeps everything clean and additive-free, so there's no need to squint at labels wondering what's hiding in the bottle. The carrots and parsnips soak up all that braising liquid and become impossibly tender alongside the fall-off-the-bone meat. Once the ribs come out of the oven, the sauce gets reduced on the stovetop until it's glossy and spoon-coating — that step alone makes the whole dish feel restaurant-worthy. Scatter a little fresh parsley over the top and bring the whole pot to the table; this one is a genuine showstopper.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
