Few things hit harder on a cold evening than bone-in short ribs that have been low-and-slow braised until the meat practically slides off the bone on its own. The braising liquid here is built around 100% pomegranate juice, apple cider vinegar, and additive-free bone broth, which means you get that deep, glossy, restaurant-worthy sauce without any of the cured or processed ingredients that typically sneak into store-bought broth or packaged meat products. Coconut aminos stand in for soy sauce and bring a subtle savory depth, while turmeric, ground ginger, and Ceylon cinnamon layer in warmth that makes the whole kitchen smell incredible. Carrots and parsnips braise right alongside the ribs, soaking up all that pomegranate-spiked liquid and turning buttery-tender by the time everything comes out of the oven. The finishing step ā reducing the braising liquid into a spoonable sauce ā is what takes this from a simple weeknight braise to something genuinely impressive. A scatter of fresh parsley over the top is all the garnish you need before bringing the whole platter to the table.
