Few dishes deliver the kind of deep, slow-cooked comfort that fall-off-the-bone short ribs do, and this version layers in something genuinely special — tart pomegranate juice, warm Ceylon cinnamon, and earthy turmeric that transform a humble braise into something almost celebratory. The braising liquid builds incredible complexity as it reduces, coating every bite of tender beef and sweet root vegetables in a glossy, aromatic sauce. Coconut aminos and apple cider vinegar add savory depth and brightness without any soy or legume-derived ingredients sneaking in, which is exactly the kind of clean swap that makes this recipe so satisfying to cook. Carrots and parsnips soak up all that braising richness and become meltingly soft alongside the ribs, so you get a full, hearty meal from a single pot. The long, low oven time does most of the heavy lifting — you sear, you layer, you wait — and what comes out is genuinely restaurant-worthy. A scatter of fresh parsley at the end cuts through the richness just enough to make every plate feel finished and bright.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
