Few things are as deeply satisfying as bone-in beef short ribs that have been low-and-slow braised until the meat practically melts off the bone, and this recipe delivers exactly that kind of comfort. The braising liquid is built around 100% pomegranate juice, apple cider vinegar, and bone broth, which creates a sauce that's tangy, rich, and just slightly sweet — nothing like the heavy red-wine braises you've probably seen everywhere else. Carrots, parsnips, and celery soak up all of that flavor as they cook alongside the ribs, so the vegetables are just as much of a highlight as the meat itself. Warm spices like turmeric, Ceylon cinnamon, and ginger give the whole dish a subtle depth that makes the kitchen smell absolutely incredible while it's in the oven. Because every ingredient here is straightforward and whole — no spice blends, no store-bought sauces, no processed shortcuts — you never have to second-guess what's actually in the pot. Tree nut concerns can be tricky with braised dishes since many recipes sneak in nut-based garnishes or specialty oils, but coconut oil and coconut aminos are the only coconut-derived ingredients here, and the finish is simply fresh parsley. This is the kind of centerpiece dish that looks and tastes like you spent all day on it, even though the oven does most of the heavy lifting.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
