Deeply browned short ribs slow-braised in pomegranate juice, bone broth, and warm spices — this is the kind of dish that makes your whole kitchen smell incredible for hours. The braising liquid builds serious depth from turmeric, ginger, and Ceylon cinnamon, while apple cider vinegar and coconut aminos add a savory-tangy backbone that keeps every bite interesting. Carrots and parsnips soak up all that richly spiced sauce as they cook, turning tender and almost sweet alongside the fall-off-the-bone beef. Avoiding emulsifiers can get tricky with store-bought broths, sauces, and seasoning blends that sneak in additives to improve texture or shelf life — but every liquid in this braise is either naturally pure or specifically called out as additive-free, so there's nothing hidden to worry about. Coconut oil handles the searing beautifully, and coconut aminos step in to add that savory depth without any of the stabilizers found in conventional soy sauces. The sauce reduces down on the stovetop at the end into something glossy and spoonable, no thickeners or emulsifying agents required — just good ingredients doing their job. Finish with a scatter of fresh parsley and bring it straight to the table.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
