Few things satisfy quite like fall-off-the-bone short ribs that have been slowly coaxed into tenderness by a rich, fragrant braise. Here, bone-in beef gets seared to a deep mahogany crust before being nestled into a braising liquid built from pomegranate juice, apple cider vinegar, bone broth, and coconut aminos — a combination that is tangy, subtly sweet, and deeply savory all at once. Carrots, parsnips, and celery soak up every bit of that braising liquid as the pot sits low and slow in the oven, turning impossibly tender alongside the meat. Warm spices — turmeric, ginger, and Ceylon cinnamon — weave through the sauce and give the whole dish an aromatic depth that makes the kitchen smell absolutely incredible. Once the ribs come out of the oven, the braising liquid gets reduced on the stovetop until it coats the back of a spoon, becoming a glossy, restaurant-worthy sauce you'll want to spoon over everything. This is naturally free of eggs at every step, with no binders, coatings, or hidden egg-based thickeners needed to achieve that luscious, silky finish. Scatter a little fresh parsley over the top and bring the whole platter straight to the table — this one is genuinely impressive without being complicated.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
