Few things satisfy quite like fall-off-the-bone short ribs that have been slowly coaxed into tenderness over hours of gentle braising. The combination of pomegranate juice, apple cider vinegar, and warm spices like turmeric, ginger, and Ceylon cinnamon creates a braising liquid that is deeply savory, faintly sweet, and layered with complexity. Avoiding citric acid can be tricky with braises like this because so many store-bought broths, sauces, and juice blends sneak it in as a preservative — here, additive-free bone broth and 100% unsweetened pomegranate juice keep things clean without sacrificing any richness. Coconut aminos step in to add that umami depth you'd normally chase with conventional condiments, and they do it beautifully. The carrots and parsnips soak up the braising liquid as they cook, turning buttery and fragrant alongside the herbs. Once the ribs come out of the oven, reducing the sauce on the stovetop concentrates every bit of that flavor into something glossy and spoonable. This is the kind of low-and-slow centerpiece that makes a whole kitchen smell incredible and earns serious praise at the table.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
