These slow-braised beef short ribs are the kind of deeply satisfying, fall-off-the-bone meal that makes the whole house smell incredible from the moment they hit the Dutch oven. Bone-in ribs are seared until deeply browned, then nestled into a braising liquid built from pomegranate juice, apple cider vinegar, bone broth, and coconut aminos — a combination that turns rich and glossy as it reduces. Warm spices like turmeric, Ceylon cinnamon, and ground ginger weave through the sauce alongside fresh thyme and rosemary, giving the braise a complexity that tastes like it took far more effort than it did. Chunky carrots, parsnips, and celery soak up all of that flavor as everything slow-cooks together at 325°F for close to three hours, until the meat pulls away from the bone with almost no resistance. Because every ingredient here is straightforwardly beef, produce, and pantry staples, there's no need to scrutinize labels for hidden poultry-based stocks or additives — the bone broth called for is specifically additive-free, and coconut aminos stand in beautifully for any soy-based shortcuts. A quick reduction of the braising liquid at the end creates a spoonable sauce that coats every bite. Finished with a scatter of fresh parsley, this is a showstopper dinner that's as weeknight-friendly as it is impressive enough for a dinner party.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the short ribs in a single layer, working in batches if needed to avoid crowding, and sear undisturbed for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared ribs to a plate and set aside.
