Few things satisfy quite like a lamb shank that has been coaxed into falling-off-the-bone tenderness over a long, slow braise. This one builds deep, layered flavor from the very first step — a hard sear in coconut oil that locks in richness before the real magic begins. Pomegranate juice and apple cider vinegar create a braising liquid that is both bright and complex, while turmeric, Ceylon cinnamon, and fresh ginger give the whole pot a warmth that feels almost luxurious. Carrots, parsnips, and sweet potato soak up every bit of that fragrant liquid as they cook, turning into tender, jewel-toned bites that are just as satisfying as the meat itself. The entire dish comes together in a single Dutch oven, which means less cleanup and more time to enjoy the incredible smell drifting through your kitchen. Because every ingredient here is straightforward and whole-food based, there is no need to scrutinize labels or worry about hidden additives sneaking into your bowl. Finish each serving with a ladle of the glossy braising liquid and a scatter of fresh parsley, and you have a showstopper that looks far more complicated than it actually is.

Preheat the oven to 325°F (165°C). Pat the lamb shanks thoroughly dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a 6-quart Dutch oven over medium-high heat until shimmering. Add 2 lamb shanks and sear, turning with tongs every 2–3 minutes, until deeply browned on all sides, about 10–12 minutes total. Transfer to a plate and repeat with the remaining 2 shanks.
