Few dishes hit as deeply as fall-off-the-bone braised lamb, and this version delivers that slow-cooked richness without any of the synthetic preservatives that sneak into so many packaged broths, spice blends, and bottled juices. Every ingredient here is whole and recognizable — coconut oil, fresh aromatics, Ceylon cinnamon, and 100% pomegranate juice with no added sugar — so you stay firmly in clean-eating territory from start to finish. The pomegranate juice and apple cider vinegar create a braising liquid that's tangy, subtly sweet, and deeply savory all at once, while turmeric and ginger layer in warmth that builds beautifully over the long cook. Carrots, parsnips, and sweet potato soak up all of that braising liquid as the shanks become impossibly tender, turning the whole pot into a complete, hearty meal. Searing the lamb first is the move that locks in a gorgeous crust and gives the sauce its deep, caramelized backbone — don't skip it. Using homemade bone broth or a carefully sourced AIP-compliant brand keeps the whole dish free from the additives that often hide in conventional stock. Serve it in a shallow bowl with a generous ladle of the braising liquid and a scatter of fresh parsley, and it looks and tastes like something that took serious culinary skill — even though the oven does most of the work.

Preheat the oven to 325°F (165°C). Pat the lamb shanks thoroughly dry with paper towels and season all over with 1 tsp of the salt.
Heat the coconut oil in a 6-quart Dutch oven over medium-high heat until shimmering. Add 2 lamb shanks and sear, turning with tongs every 2–3 minutes, until deeply browned on all sides, about 10–12 minutes total. Transfer to a plate and repeat with the remaining 2 shanks.
