Pat the okra completely dry with paper towels — surface moisture causes steaming rather than browning. If any pods are longer than 3 inches, halve them crosswise.
Heat the garlic-infused olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the okra in a single layer and cook undisturbed for 3–4 minutes, until the undersides are lightly browned. Toss and cook for another 2–3 minutes, until the pods are browned on most sides.
