Bright, citrus-forward, and loaded with fresh ingredients, this shrimp and avocado ceviche is the kind of dish that looks impressive but comes together with surprisingly little effort. The shrimp are cured entirely in a trio of fresh lime, lemon, and orange juice — no heat required — so every element on the ingredient list is something you can actually recognize and trust. That matters a lot when you're trying to avoid synthetic dyes, because store-bought seafood dishes and pre-made salsas are notorious for sneaking in color additives you never asked for. Here, the vivid pinks, greens, and reds come straight from the shrimp, avocado, cherry tomatoes, and cilantro — nothing artificial needed to make this bowl look stunning. A quick soak for the red onion mellows its sharpness, and a small splash of the reserved citrus marinade ties everything together with a punchy, tangy finish. Fold in the creamy avocado at the very end and serve right away for the best texture. Scoop it up with tortilla chips or enjoy it on its own — either way, it's clean, colorful eating at its most satisfying.

In a large bowl, combine the shrimp pieces with the lime juice, lemon juice, and orange juice. Stir to coat, then press the shrimp down so they are mostly submerged. Cover and refrigerate for 25–30 minutes, until the shrimp are opaque throughout and firm to the touch with no translucent gray areas remaining — the acid will have fully cured them.
While the shrimp cure, place the diced red onion in a small bowl of cold water and let it soak for 10 minutes, then drain. This removes some of the sharp bite.
