Comfort food doesn't get much more satisfying than a bubbling skillet of savory lamb and vegetables topped with a cloud of creamy mash — and this version delivers every bit of that cozy, stick-to-your-ribs magic. The topping is made entirely from cauliflower blended with coconut oil, so it gets beautifully smooth and golden in the oven without relying on any stabilizers or thickening additives. For the filling, arrowroot starch steps in to thicken the rich bone broth sauce, which means the whole dish is naturally free from gummy binders that sneak into so many store-bought or restaurant versions. Coconut aminos and apple cider vinegar add a deep, savory complexity to the lamb, while fresh thyme, rosemary, turmeric, and ginger layer in warmth that makes the kitchen smell absolutely incredible. The mushrooms, carrots, and celery bulk out the filling and soak up all that glossy, herb-laced sauce in the best possible way. Baking everything together in one oven-safe skillet lets the mash peak and turn golden while the filling bubbles up at the edges — it's the kind of dish that looks like you spent all day on it, even though the process is totally manageable. Finish with a scatter of fresh parsley and let it rest just long enough to serve clean, hearty scoops straight from the pan.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
