Shepherd's pie is one of those deeply satisfying, cold-weather dishes that can feel completely off the table when you're eating clean — but this version proves otherwise. Ground lamb is browned until rich and savory, then layered with carrots, celery, mushrooms, and a glossy bone broth sauce seasoned with fresh thyme, rosemary, turmeric, and ginger. Coconut aminos and apple cider vinegar do the heavy lifting in place of Worcestershire or wine, giving the filling that deep, complex flavor you'd expect from a classic without any off-plan ingredients. Instead of the usual buttery potato topping, cauliflower florets are boiled until completely tender and mashed smooth with coconut oil — the result is creamy, comforting, and holds up beautifully in the oven. Arrowroot starch thickens the sauce naturally, so every bite of filling is saucy rather than dry or crumbly. The whole thing bakes until the mash turns golden at the peaks and the edges bubble, which means your kitchen is going to smell absolutely incredible. It's the kind of meal that genuinely doesn't feel like a compromise — just real, hearty food done right.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
