Shepherd's pie is one of those deeply satisfying comfort dishes that feels like it was made for cold nights and hungry families, and this version delivers every bit of that cozy, stick-to-your-ribs energy. The filling is built on ground lamb, sweet carrots, celery, mushrooms, and a savory sauce thickened with arrowroot starch and bone broth — no canola, soybean, or vegetable oil anywhere in sight. Coconut aminos and a splash of apple cider vinegar add a subtle depth that makes the whole thing taste like it simmered for hours, even though it comes together in a single oven-safe skillet. Instead of the usual buttery potato topping, a cloud of coconut oil–mashed cauliflower seals in the filling and turns golden at the peaks in the oven, giving you that classic crust without any of the usual shortcuts. Turmeric, ginger, fresh thyme, and rosemary weave through every bite, so the flavor is warm and complex rather than flat. It's the kind of meal that looks impressive on the table but is genuinely straightforward to pull off, and the one-pan approach means cleanup is mercifully easy. Finish it with a scatter of fresh parsley and you've got a showstopper that happens to check every box.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
