Shepherd's pie is the kind of deeply satisfying comfort food that earns a permanent spot in your dinner rotation, and this version delivers every bit of that hearty, slow-cooked flavor without a single grain in sight. The filling is built on browned ground lamb, sweet carrots, celery, mushrooms, and a savory sauce thickened with arrowroot starch and bone broth — no flour, no barley, no rye, nothing that could sneak in and cause a problem. Coconut aminos and a splash of apple cider vinegar add a rich, umami depth that makes the sauce taste like it simmered all afternoon, even though it comes together in minutes on the stovetop. Instead of the traditional potato topping, a cloud of whipped cauliflower mash — made creamy with coconut oil — seals in all that bubbling filling and turns golden at the peaks in the oven. Fresh thyme, rosemary, turmeric, and ginger give the whole dish a warmth and complexity that feels anything but plain or restricted. It's the kind of meal that genuinely impresses at the table, and nobody needs to know it was designed with careful ingredient choices in mind. Finish it with a scatter of fresh parsley and let it rest just long enough to serve cleanly — if you can wait that long.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
