Shepherd's pie is the kind of deeply satisfying comfort food that earns a permanent spot in your weeknight rotation, and this version delivers every bit of that hearty, stick-to-your-ribs magic. Ground lamb forms the heart of the filling, slow-cooked with carrots, celery, mushrooms, and a fragrant blend of thyme, rosemary, turmeric, and ginger until the sauce is rich and glossy. Coconut aminos and apple cider vinegar add a subtle savory depth that makes the whole skillet smell absolutely incredible. Instead of the classic potato topping, a cloud of whipped cauliflower mash — made creamy with coconut oil — seals everything in and bakes up golden at the peaks. The swap keeps things lighter without sacrificing any of the cozy, oven-baked appeal you expect from this dish. Because every ingredient here is straightforwardly meat- and vegetable-based, there's no need to scrutinize labels or worry about hidden additives sneaking in. Finish it with a scatter of fresh parsley and bring it straight to the table — it's the kind of meal that disappears fast.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
