Shepherd's pie is the kind of deeply satisfying comfort food that earns its place at the table on a cold night, and this version delivers every bit of that hearty, stick-to-your-ribs warmth. The filling is built on ground lamb browned with onion, carrots, celery, and mushrooms, then brought together with bone broth thickened by arrowroot starch — no flour, no grains, nothing that could sneak in unwanted ingredients. Coconut aminos and apple cider vinegar add a savory depth that makes the sauce taste like it simmered all day, while fresh thyme, rosemary, turmeric, and ginger round out the flavor with real complexity. Instead of a traditional potato topping, a cloud of coconut oil–mashed cauliflower gets spread over the filling and baked until the peaks turn golden and the edges bubble up around the sides. The swap is genuinely delicious — creamy, slightly rich, and sturdy enough to hold its own against that boldly seasoned lamb. Every ingredient here is straightforward and easy to verify, which takes the guesswork out of building a meal that works for grain-sensitive households. Finish it with a scatter of fresh parsley and let it rest just long enough to serve in clean, satisfying scoops.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
