Shepherd's pie is one of those deeply satisfying comfort dishes that feels like a hug on a cold evening, and this version delivers every bit of that warmth without relying on the spice that so many classic recipes quietly sneak in. The filling is built on ground lamb, sweet carrots, celery, mushrooms, and a savory sauce made with bone broth, coconut aminos, and a splash of apple cider vinegar — layers of flavor that come together in a rich, glossy gravy thickened naturally with arrowroot starch. Fresh thyme, rosemary, turmeric, and ginger do all the heavy lifting in the spice department, giving the filling real depth and complexity. Instead of the traditional potato topping, a cloud of whipped cauliflower mash — made creamy with coconut oil — seals everything in and bakes up golden at the peaks. It's a smart swap that keeps the dish feeling indulgent while staying completely free of any warming spices you might be avoiding. The whole thing goes from stovetop to oven in one skillet, which means less cleanup and more time to enjoy the incredible smell filling your kitchen. Finish it with a scatter of fresh parsley and you've got a showstopper that's as weeknight-friendly as it is impressive enough for company.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
