Creamy mashed cauliflower makes the perfect golden-topped blanket for a deeply savory filling built from sautéed onion, carrot, celery, and mushrooms, all simmered together with garlic, fresh thyme, rosemary, turmeric, and ginger for real depth of flavor. A splash of apple cider vinegar and a rich, brothy sauce thickened with arrowroot pull everything together into a filling that's hearty, saucy, and full of warmth in every bite. The whole thing bakes until the mash turns lightly golden at the peaks and the filling bubbles at the edges, giving you that classic comfort-food contrast of creamy top and savory, herb-laced base underneath. Finished with a scatter of fresh parsley, it's the kind of cozy, vegetable-forward dish that still feels indulgent without being heavy. This version comes together as a genuinely solid pick for anyone following a Mediterranean approach, leaning on herbs, aromatics, and produce to do most of the heavy lifting. It's an easy one to put on repeat for a weeknight dinner that still feels special enough for company.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
