Shepherd's pie is one of those deeply satisfying comfort dishes that can feel off-limits when you're avoiding dairy — traditional versions rely heavily on butter and cream to get that luscious mashed topping. This one solves the problem beautifully by swapping in cauliflower mashed with coconut oil, which turns out silky, golden-edged, and completely crave-worthy without a drop of dairy in sight. The filling is built on ground lamb slow-cooked with onion, carrots, celery, mushrooms, and a fragrant blend of thyme, rosemary, turmeric, and ginger, all brought together with bone broth thickened by arrowroot starch. Coconut aminos and a splash of apple cider vinegar add a savory depth that makes the sauce taste like it's been simmering for hours. Everything bakes together in a single oven-safe skillet until the topping is lightly golden at the peaks and the filling is bubbling at the edges — the kind of visual that makes it hard to wait the full five minutes before digging in. It's a genuinely hearty, crowd-pleasing meal that doesn't ask you to compromise on flavor or texture to keep it free from lactose.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
