Shepherd's pie is the kind of deeply satisfying, cold-weather comfort food that earns a permanent spot in the dinner rotation, and this version delivers every bit of that hearty, stick-to-your-ribs appeal. The filling is built on ground lamb browned with onion, carrot, celery, and mushrooms, then pulled together with bone broth thickened by arrowroot starch into a rich, glossy sauce. Fresh thyme, rosemary, turmeric, and ginger do the heavy lifting on flavor — no spice blends, no pre-made seasonings, and absolutely no hidden warming spices that can sneak into conventional recipes. Coconut aminos and a splash of apple cider vinegar add just enough savory depth and brightness to make the filling taste like it simmered all day. Instead of the traditional potato topping, a cloud of coconut oil–mashed cauliflower goes on top and bakes until golden at the peaks, giving you all the creamy contrast without straying from the ingredient list. Every component is made from scratch in a single oven-safe skillet, which means fewer dishes and full control over what goes in. Finished with a scatter of fresh parsley, this is a genuinely impressive dinner that happens to work beautifully for anyone navigating spice sensitivities.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
