Few dishes hit the comfort-food sweet spot quite like a bubbling shepherd's pie pulled straight from the oven, and this version delivers every bit of that cozy, stick-to-your-ribs satisfaction. The filling is built on ground lamb browned until deeply savory, then layered with onion, carrots, celery, and finely chopped mushrooms that add body and an earthy richness to every bite. Coconut aminos and apple cider vinegar deglaze the pan and bring a subtle depth, while arrowroot-thickened bone broth ties the whole filling together into a glossy, spoonable sauce fragrant with thyme, rosemary, turmeric, and ginger. Instead of the traditional buttery potato topping, a cloud of whipped cauliflower mash — made creamy with coconut oil — seals in the filling and bakes up golden at the peaks. The swap works beautifully: the mash is smooth enough to spread to the edges and sturdy enough to hold its shape when you scoop a generous portion onto a plate. Everything comes together in a single oven-safe skillet, which means less cleanup and more time enjoying dinner. A scatter of fresh parsley at the end is optional, but it adds a bright pop of color that makes the whole dish look as good as it tastes.
