Shepherd's pie is the kind of deeply satisfying, cold-weather comfort food that earns a permanent spot in your dinner rotation, and this version delivers every bit of that hearty, stick-to-your-ribs appeal. Ground lamb is browned until rich and savory, then layered with onion, carrots, celery, and mushrooms in a glossy sauce built from bone broth, coconut aminos, and a touch of apple cider vinegar. Fresh thyme, rosemary, turmeric, and ginger give the filling a warmth and depth that goes well beyond your average weeknight pie. Instead of the usual buttery potato topping, a cloud of coconut oil–mashed cauliflower seals everything in and bakes up golden at the peaks while the filling bubbles underneath. The whole thing comes together in a single oven-safe skillet, which means less cleanup and a beautiful straight-to-the-table presentation. Because every ingredient here is whole and straightforward — no packaged sauces, no mystery seasonings — you can cook with complete confidence that nothing unwanted has snuck into the pot. Finish with a scatter of fresh parsley and you've got a showstopper that tastes like it took far more effort than it actually did.

Preheat the oven to 400°F (205°C). Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until completely tender and easily pierced with a fork, about 12–15 minutes. Drain thoroughly and return to the pot.
Add 2 tbsp of the coconut oil and 1/2 tsp salt to the drained cauliflower. Mash with a potato masher or beat with a hand mixer until smooth and creamy, with no large lumps remaining. Taste and adjust salt. Set aside.
