Preheat the oven to 325°F (165°C). Line a large rimmed baking sheet with parchment paper.
In a mixing bowl, combine the sesame seeds, sunflower seeds, pumpkin seeds, and chia seeds. Add the grated ginger, tamari, sesame oil, honey, salt, and black pepper, then pour in the water. Stir until everything is evenly coated and the mixture looks wet and cohesive — the chia seeds will begin to absorb the liquid and help bind the mixture.
