Oatmeal doesn't have to be a sweet, syrupy affair — and this savory version proves it in the most satisfying way. Steel-cut oats are simmered with turmeric, ginger, and black pepper until thick and creamy, giving you a deeply warming base that's genuinely filling without a single gram of added sugar in sight. A silky poached egg and fanned slices of ripe avocado go on top, finished with a drizzle of good olive oil and a pinch of red pepper flakes if you like a little heat. Every component here is whole and unprocessed, so there's no label-reading required and no hidden sweeteners sneaking in through a flavored packet or pre-mixed seasoning blend. The turmeric and ginger do real work, adding earthy, slightly spicy depth that makes the bowl feel more like a proper meal than a compromise. It's the kind of breakfast that keeps you full for hours and makes you wonder why you ever defaulted to the sweet stuff in the first place.

Bring 3 cups of water to a boil in a medium saucepan over high heat. Stir in the steel-cut oats, turmeric, ginger, black pepper, and salt. Reduce the heat to medium-low and cook, stirring occasionally, until the oats are tender and have absorbed most of the liquid, about 20–22 minutes. Stir in 1 tbsp olive oil and remove from heat.
While the oats finish cooking, fill a small saucepan with about 3 inches of water and bring to a gentle simmer over medium heat. Add the white vinegar. Crack each egg into a small cup, then slide them one at a time into the simmering water. Poach until the whites are fully set and opaque but the yolks still yield to gentle pressure, about 3–4 minutes. Remove with a slotted spoon and set on a paper towel to drain briefly.
