Every ingredient here is naturally free of gluten, so there's no substituting or label-scanning required — just straightforward, satisfying cooking from start to finish. The real magic begins with the pork belly, which renders slowly in a cold skillet until the cubes turn golden, crispy, and deeply savory. Brussels sprouts go in next, cut-side down in that same pan, picking up a gorgeous caramelized crust before the outer leaves get just a little charred at the edges. Sliced garlic and chunks of Honeycrisp or Fuji apple join the party, adding sweetness and a subtle crunch that balances the richness of the pork. A quick drizzle of maple syrup and apple cider vinegar pulls everything together into a glossy, tangy-sweet glaze that coats every sprout and apple piece. A pinch of red pepper flakes and a scatter of fresh parsley finish it off with just enough brightness and heat. This is the kind of one-pan dish that makes a weeknight feel like a special occasion.

Place the pork belly cubes in a cold large (12-inch) skillet and set over medium heat. Cook, stirring occasionally, for 8–10 minutes until the fat has rendered and the pieces are golden brown and crispy on most sides. Transfer the pork belly to a plate, leaving the rendered fat in the skillet.
Pour off all but about 1 teaspoon of the rendered fat from the skillet. Add the olive oil and increase the heat to medium-high. Add the Brussels sprouts cut-side down in a single layer and cook undisturbed for 4–5 minutes until the cut sides are deep golden brown.
