Bright, tangy, and just the right amount of smoky, this salsa verde is built entirely from whole, recognizable ingredients — no mystery additives, no artificial anything hiding in the bottle. Tomatillos go under the broiler until their skins blister and char, which coaxes out a deep, roasted flavor that store-bought versions try to fake with flavoring agents and never quite nail. Fresh cilantro, real lime juice, and a touch of cumin do all the heavy lifting here, and you can taste the difference immediately. The garlic-infused oil adds a mellow, savory backbone without any processed shortcuts. You control the heat by adjusting the jalapeño and the texture by how long you run the blender, so it works equally well as a chunky chip dip or a smooth drizzle over tacos and grilled proteins. It comes together in minutes and keeps beautifully in a jar in the fridge, making it one of the most useful sauces you can have on hand.

Position an oven rack 4–6 inches from the broiler and preheat the broiler to high. Arrange the tomatillos and jalapeño halves cut-side down on a rimmed baking sheet. Broil for 8–10 minutes, until the tomatillo skins are blistered and charred in spots and the flesh is soft and beginning to collapse.
Remove the baking sheet from the oven and let the tomatillos and jalapeño cool for 5 minutes. Transfer them along with any accumulated juices to a blender or food processor.
