For the roasted butternut squash
- 1 medium butternut squash (about 2 lb), peeled, seeded, and cut into ¾-inch cubes
- 2 tbsp olive oil
- ½ tsp fine sea salt
- 1 tsp fresh rosemary, finely chopped
For the turkey burgers
- 1 ¼ lb ground turkey (93% lean)
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh parsley, finely chopped
- ¾ tsp fine sea salt
- 1 tbsp olive oil
For serving
- 2 tbsp fresh parsley, roughly chopped (optional)

Preheat the oven to 425°F (220°C). Spread the butternut squash cubes in a single layer on a large baking sheet. Drizzle with 2 tbsp olive oil, sprinkle with 1/2 tsp salt and 1 tsp chopped rosemary, and toss to coat evenly.

Roast the squash for 25–30 minutes, flipping once halfway through, until the edges are golden and caramelized and the cubes are tender when pierced with a fork. Remove from the oven and set aside.
