Few things hit harder than a perfectly roasted chicken with crackling golden skin, and this version delivers exactly that with a fragrant herb paste that gets tucked under the skin and rubbed all over the outside. The spatchcock technique — removing the backbone so the bird lies flat — means faster, more even cooking and dramatically crispier skin than a traditional roast, all in 40 to 45 minutes. The paste itself is built from coconut oil, fresh rosemary, thyme, minced garlic, turmeric, ginger, and a bright hit of lemon zest and apple cider vinegar, every single ingredient carefully chosen to stay within autoimmune protocol guidelines. Nightshades, grains, eggs, dairy, nuts, and seeds are completely off the table on AIP, which makes seasoning a roast chicken feel tricky — but this recipe proves you don't need any of them to get deep, complex flavor. Roasting the lemon halves alongside the bird and squeezing them over the carved pieces at the end adds a caramelized citrus note that ties everything together beautifully. Serves four, and the leftovers are genuinely excellent cold the next day.

Position a rack in the upper third of the oven and preheat to 425°F (220°C). Set a wire rack inside a rimmed baking sheet.
Place the chicken breast-side down on a cutting board. Using kitchen shears, cut along both sides of the backbone from tail to neck and remove it entirely. Flip the chicken breast-side up, open it flat, and press firmly down on the breastbone with the heel of your hand until you hear a crack and the bird lies flat.
