Roasted acorn squash is one of those fall and winter sides that looks impressive on the table but asks very little of you in the kitchen. The cut sides go down on the pan first, building a deep golden crust before they ever meet the glaze — a small step that makes a big difference in flavor and texture. That glaze is where things get really good: garlic softened in coconut oil, fresh rosemary, a touch of maple syrup, apple cider vinegar, and a pinch of turmeric all come together into something fragrant, slightly sweet, and just a little tangy. It spoons right into the natural cavity of each half and caramelizes beautifully around the edges during that final roast. Tree nut allergies and sensitivities can make a lot of cozy autumn recipes feel off-limits, but every single ingredient here is straightforward and easy to verify — no hidden nut oils, no ambiguous add-ins. Serve it straight from the pan with a few fresh rosemary sprigs and it looks like something from a restaurant menu.
