Roasted acorn squash is one of those dishes that looks impressive but asks very little of you, and this version takes it somewhere truly special. The squash halves go into the oven cut-side down first, which coaxes out deep, golden caramelization before they ever meet the glaze — a small step that makes a big difference in flavor. That glaze is where things get interesting: fragrant garlic softened in coconut oil, woody fresh rosemary, a touch of maple syrup for gentle sweetness, and apple cider vinegar to keep everything bright and balanced. A pinch of turmeric rounds it all out with a warm, earthy note that also happens to be a favorite ingredient for supporting a happy gut. Every component here is whole, recognizable, and naturally easy on digestion — no processed additives, no hidden irritants, just clean ingredients doing exactly what they're supposed to do. The finished halves come out of the oven tender all the way through, with a lightly caramelized glaze pooled in the cavity and the scent of rosemary filling the kitchen. It works beautifully as a cozy side dish or a light centerpiece on its own.
