Roasted acorn squash is one of those fall and winter sides that looks impressive but asks very little of you, and this version takes it somewhere truly special. The squash halves go into the oven cut-side down first, building a deep golden crust before they're flipped and loaded with a fragrant glaze of garlic, fresh rosemary, maple syrup, apple cider vinegar, and a whisper of turmeric. That glaze caramelizes at the edges during the second roast, giving you tender, buttery flesh with a sticky-savory finish that tastes far more complex than the ingredient list suggests. Every component here is straightforward and naturally free from tree nuts, so there's no need to scrutinize labels or worry about cross-contact from nut-based oils or coatings that sneak into so many roasted vegetable recipes. Coconut oil does the heavy lifting as the fat, keeping things rich without any almond flour, almond oil, or similar additions that sometimes appear in glazed squash dishes. It works beautifully as a centerpiece side for a holiday spread or a weeknight dinner alongside roasted chicken or a hearty grain. Garnish with a few fresh rosemary sprigs and it's genuinely dinner-party worthy with almost no effort.
